Can I make burnt ends without a smoker?

Definitely. If you don’t have a smoker, the oven is a great alternative. You can still get rich BBQ flavor by seasoning the meat well, baking it low and slow, then finishing with sauce and a higher temperature to create that classic sticky exterior.

Tip: Adding smoked paprika or a few drops of liquid smoke helps mimic traditional smoky flavor.

How to Make Burnt Ends in the Oven

  • Start by cutting your meat into bite-sized cubes and tossing them with your favorite BBQ seasoning.
  • Arrange the pieces in a baking dish, then cook them slowly in the oven until they become tender and juicy.
  • After the initial cook time, the meat is coated with BBQ sauce and returned to the oven uncovered so the edges can caramelize and develop that classic burnt ends texture.

Can you make burnt ends in the oven?

Yes! You can absolutely make burnt ends in the oven. While traditional burnt ends are smoked, the oven method still creates tender, flavorful bites with a caramelized BBQ coating using low, slow cooking and a final high-heat finish.

What cut of meat is best for burnt ends?

The classic cut is beef brisket point, which has more marbling and becomes extra tender when cooked slowly. Other popular options include pork belly (very common for oven versions), chuck roast (budget-friendly substitute), brisket flat (leaner but still works). Pork belly burnt ends are especially popular for oven recipes because they cook faster and stay juicy.

How long do burnt ends take to cook?

Burnt ends typically take 2½ to 4 hours in the oven, depending on the cut of meat and cube size. Low and slow cooking is what creates that tender texture.

Should I cover burnt ends in the oven?

Yes — covering burnt ends during the first stage of cooking helps keep them tender and prevents them from drying out.
