Starbucks Copycat Blueberry Muffins Recipe

These Starbucks Blueberry Muffins are soft, fluffy, and bursting with juicy blueberries, topped with a buttery crumb topping that tastes just like your favorite coffee shop bakery treat.

Ingredients

  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 cup sugar
  • 1 cup plain yogurt
  • ½ cup canola oil
  • 1 tsp vanilla extract
  • 2 ⅓ cups fresh or frozen Blueberries
  • 1-2 tbsp flour
  • 1 cup all-purpose flour
  • ⅔ cup sugar
  • 1 stick butter melted
  • 1 tsp cinnamon

Instructions

  1. Line a muffin tin with paper liners and preheat oven to 400 degrees. 
  2. In a large bowl, sift together flour, baking powder and salt. 
  3. In a medium bowl, mix together sugar and eggs.
  4. Mix in yogurt, oil and vanilla extract. 
  5. Fold wet ingredients into the dry ingredients and mix until combined. 
  6. In a small bowl, coat 2 cups of blueberries with 1-2 tbsp flour. 
  7. Add blueberries into muffin batter. 
  8. Spoon muffin batter into muffin tin, filling about 2/3rds the way to the top. 
  9. Top each muffin with remaining blueberries. 
  10. Make the crumb topping: Mix together remaining flour, butter and cinnamon. 
  11. Sprinkle on top of each muffin. 
  12. Bake in the oven 15-18 minutes or until a toothpick comes out clean. 

  13. Dust blueberry muffins lightly with powdered sugar after they have cooled.
