
Make rich, bite-size cake balls with no oven needed. These easy treats are perfect for holidays, parties, and make-ahead desserts everyone loves.
In the bowl of a stand mixer, combine the softened butter and sugar. Cream until smooth.
Add in the dry ingredients - flour and dry boxed cake mix. Mix on low speed just until combined - it will be crumbly looking.
Add in the vanilla, salt and milk. Mix on low speed until the mixture combines and a dough forms. You should be able to press it together and it forms a ball.
Chill the dough for approximately 30 minutes.
When ready to assemble, place the white chocolate chips in a microwave safe bowl and heat in 30 second increments. Stir melted chocolate until smooth.
Using a small cookie scoop, scoop 1-inch balls.
Using a spoon, dip each cake ball into the melted white chocolate and tap the excess off into the bowl.
Transfer the dipped cake ball to a sheet of parchment paper.
Before the white chocolate sets, decorate with the rainbow sprinkles.
Allow to set.
Storage: Cake balls can be stored in an airtight container in the fridge for up to 3 days or frozen for 3 months.
