Ingredients

For the Cookies

  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 3 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups buttermilk

For the Frosting

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • Food coloring optional
  • Sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin and end with the dry ingredients, mixing until just combined.
  6. Be sure to scrape down the sides of the bowl.
  7. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Be careful not to overbake to maintain that soft, cake-like texture.
  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. To make a homemade frosting, beat together the softened butter, powdered sugar, heavy cream, and vanilla extract until smooth and creamy.
  11. Add food coloring if desired, mixing until the desired color is achieved.
  12. Adjust the frosting's consistency with additional powdered sugar or cream as needed. A thicker frosting is better.
  13. Once the cookies are completely cooled, generously frost the tops with the prepared frosting.
  14. Decorate with colorful sprinkles to add a festive touch.
  15. The frosting typically sets within an hour at room temperature. For a quicker setting, you can place the cookies in the refrigerator for about 15-20 minutes.
