
This easy pumpkin spice coffee cake starts with a box of Krusteaz Pumpkin Spice Bread Mix and is finished with a buttery cinnamon crumb topping. Serve it warm for a simple fall breakfast, brunch or dessert.
Preheat the oven to 375°F. Grease an 11x7-inch baking pan with nonstick cooking spray and set aside.
In a large mixing bowl, prepare the pumpkin bread mix with the oil, water and eggs according to the package directions.
Pour the prepared batter evenly into the greased baking pan and set aside.
In a small bowl, combine the flour, sugar and cinnamon.
Add the softened butter. Using a pastry blender or fork, cut the butter into the dry ingredients until small crumbs form.
Sprinkle the cinnamon crumb topping evenly over the pumpkin batter.
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean or with a few soft crumbs attached.
Remove the coffee cake from the oven and let it cool until warm. Cut it into 8 large rectangles or 12 smaller pieces and serve.
Pillsbury Pumpkin Quick Bread Mix can be used in place of Krusteaz. The Pillsbury mix is 14 ounces, while the Krusteaz mix is 15 ounces. Prepare whichever mix you use with the oil, water and eggs listed on its package.
Follow the temperature printed on the box if it differs from the recipe. The one-ounce difference between the mixes should not cause a problem, although baking time may vary slightly.
If you use an 8x8-inch or 9x9-inch pan, the thicker coffee cake may need additional baking time. Check the center with a toothpick before removing it from the oven.
