How to Make Whoopie Pies with Cake Mix

Ingredients

  • 1 box vanilla cake mix
  • ¼ cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • ¼ cup uncoated sprinkles
  • 7 ½ oz jar of marshmallow fluff
  • ½ stick butter
  • 2 tsp vanilla
  • 1-2 cups confectioner's sugar

Instructions

  1. Preheat oven to 375
  2. Add cake mix, eggs, oil, vanilla and sprinkles to a large bowl and stir until fully incorporated.
  3. Using a small cookie scoop, scoop even balls of the cookie dough onto a parchment lined baking sheet.
  4. Leave 2 inches between each ball of dough so it has room to expand.
  5. Bake in a 375 degree oven for 10-12 mins or until the edges begin to brown.
  6. Allow to cool.
  7. Make the marshmallow icing by beating fluff and butter until smooth.
  8. Add in the confectioners sugar a little at time beating until smooth.
  9. Icing should not be super stiff but fall into a ribbon pattern.
  10. Using the same scooper from the cookies, add one scoop of icing to the cooled cookies.
  11. Roll in the sprinkles.
  12. Serve at room temperature or serve cold

Recipe Notes

Store Cake Mix Whoopie Pies in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze individually wrapped whoopie pies for up to 3 months.
