Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract optional

Instructions

  1. In a large mixing bowl bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, melted butter (or oil), and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Be careful not to overmix; it's okay if there are a few lumps.
  5. Heat a griddle or skillet over medium heat.
  6. On a lightly oiled griddle, pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  8. Stack your pancakes and top with syrup, butter, fruit, or any of your favorite toppings.

Recipe Notes

  • If you’re making pancakes for a crowd, keep them warm in the oven at 200°F while you cook the rest.
  • Store leftover pancakes in an airtight container in the refrigerator.
