Ingredients

  • Flaky Buttermilk Biscuits
  • 1 pound of pork breakfast sausage
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • Salt and black pepper to taste
  • Optional: a pinch of red pepper flakes for a bit of heat

Instructions

  1. While your biscuits bake, start with your homemade sausage gravy.
  2. In a large skillet over medium-high heat, cook the sausage until it’s browned and cooked through, breaking it up into crumbles with a wooden spoon as it cooks.
  3. Sprinkle the flour over the cooked sausage and stir well to coat the meat.
  4. Cook for about 1-2 minutes to remove the raw flour taste.
  5. Gradually add the milk to the skillet, stirring constantly to prevent lumps.
  6. Continue to cook and stir until the gravy thickens, about 5-7 minutes.
  7. Season with salt and pepper to taste. If you like a bit of heat, add a pinch of red pepper flakes. Taste your gravy as you go and adjust the seasoning as needed.
  8. The sausage will add some saltiness, so be cautious when adding additional salt.
  9. Remove from heat and let the gravy sit for a minute to thicken further.
  10. Split warm biscuits in half and place it on a plate.
  11. Generously ladle the sausage gravy over the biscuit halves.
  12. Serve immediately and enjoy.
