
Make chewy, wholesome muesli bars at home with oats, fruit, and honey. A quick, healthy snack that’s perfect for breakfast or lunchboxes!
Preheat oven to 350 and line a 9x9 square baking dish with parchment paper and set aside.
Add oats, coconut, apricots, cranberries, almonds and brown to a large bowl and mix well.
Mix together honey (or maple syrup, agave) and melted butter together. Pour into oat and fruit mixture and mix well to evenly coat. Pour into prepared pan.
Spread mixture evenly into pan and firmly press into the pan.
Bake for 35-40 minutes or until golden brown. Remove from oven and cool completely before cutting.
Remove parchment paper and slice into bars about 1-1/4" wide and 4-1/2" long
Storage tip: Store in an airtight container at room temperature for up to 5 days or in the fridge for up to 2 weeks.
