Dr Pepper Cupcakes recipe

These Dr Pepper Cupcakes are rich, moist, and packed with chocolate flavor thanks to a can of soda and a simple cake mix shortcut. Each cupcake is filled with creamy frosting in the center for an extra sweet surprise, making them perfect for birthdays, parties, and easy weeknight desserts.

Ingredients

  • 1 box dark chocolate fudge cake mix
  • 1½ cup of Dr Pepper soda cherry flavored
  • 2 jars maraschino cherries one jar with stems
  • 8 tbsp butter softened
  • 6 oz cream cheese (softened
  • 7 c powdered sugar approx.

Instructions

  1. Preheat oven to 350°.
  2. Lightly spray cupcake pan (18 individual) with a non-stick baking spray. Can use cupcake liners in pan if desired.
  3. Cut cherries from one jar into quarters. Reserve the juice.
  4. Mix box of chocolate cake mix and the Dr. Pepper until combined in a large mixing bowl.
  5. Fold in the cherries.
  6. Pour batter into cupcake pans until ⅔ full.
  7. Bake on center rack of the oven for approx. 25 min. or until a toothpick inserted into center comes out clean.
  8. Cool cupcakes on wire rack.
  9. Using an apple corer or spoon, remove centers of cupcakes.
  10. Using an electric mixer, beat the cream cheese and butter until light and fluffy. Add in powdered sugar, one cup at a time.
  11. Halfway through, pour in 6 tbsp. of the cherry juice.
  12. Continue mixing, adding in more sugar until the icing is a spreadable consistency.
  13. Using a #1M icing tip (or tip of choice) and a piping bag, pipe the icing into each hole in the cupcakes and then onto the tops of each cupcake.
  14. Top each with a whole cherry.

Recipe Notes

Store the cupcakes in an airtight container for up to 3 days. You can also freeze them (unfrosted) for up to 3 months.
