Cracker Barrel Broccoli Cheese Casserole

Broccoli Cheddar Chicken is a hearty, cheesy casserole perfect for a family dinner or meal prep. Made with tender chicken, broccoli, and a creamy cheese sauce, it's topped with a crispy, buttery cracker crust for added crunch. This comforting dish is easy to make and great for busy weeknights or potlucks.

Ingredients

  • 2 cups white rice cooked according to package directions
  • 1 1/2 lb chicken breasts diced
  • 2 cups broccoli fresh or frozen
  • 2 cups cheddar cheese
  • 1 10 oz. can of cream of chicken soup
  • 1 4 oz packet of Velveeta cheese

Instructions

  1. The first thing to do is dice juicy white meat chicken into 1 inch pieces.
  2. Saute them until they are browned and cook through in about a tablespoon of olive oil.
  3. Season with kosher salt and pepper. 
  4. Cook your rice according to directions.
  5. If using fresh broccoli, wash and trim the stems.
  6. If you are using frozen, cook according to your package's directions. 
  7. Place chicken breasts, broccoli and rice in a large mixing bowl.
  8. Add in the can of cream of chicken and velveeta.
  9. Stir to combine. 
  10. Spray a casserole dish with non-stick spray.
  11. Spoon cracker barrel broccoli cheddar chicken casserole mixture into the baking dish. 
  12. Top the casserole with the shredded cheese. 
  13. Bake the broccoli casserole at 350 until the cheese has melted and is bubbly. 

Recipe Notes

If you decide to make this Cheesy Chicken and Broccoli Casserole to freeze, make it in a disposable tray, top with aluminum foil and let it cool before freezing. To make from the freezer, simply put into the oven until it has cooked through.
