Ingredients

  • 1 box 15.25 oz white cake mix
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • blue food coloring

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened butter, eggs, and vanilla extract.
  3. Use a hand mixer or whisk to mix until well combined.
  4. Gradually add the white cake mix to the wet ingredients.
  5. Stir until the mixture is smooth and there are no lumps.
  6. Add 2-3 drops of blue food coloring to the batter until you achieve your desired shade of blue.
  7. Gently fold in the white chocolate chips with a spatula until evenly distributed.
  8. Use a cookie scoop to drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  10. The centers may look slightly underbaked, but they will set as they cool.
  11. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
