Preheat oven to 375 and line a baking sheet with parchment paper. Set aside.
In a mixing bowl, combine baking mix, peanut butter, vanilla, sweetened condensed milk and eggs and mix well until combined. Dough will be stiff.
Fold in chocolate chips.
Using a 2 tablespoon portion scoop, scoop batter onto prepared baking sheet and gently press cookie so it's about 1" thick.
Bake for 10-12 minutes or until bottoms are browned.
Remove from oven and let stand for two minutes on a baking sheet before removing and setting on a cooling rack to cool completely.
Store cookies in an airtight container at room temperature for up to 4 days to keep them soft.
