Ingredients

  • 2 cups pancake mix
  • ½ cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional mix-ins: chocolate chips nuts, dried fruits

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine pancake mix, softened butter, egg, and vanilla extract. Mix until well combined.
  3. If desired, fold in your favorite mix-ins.
  4. Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
