Ingredients

  • 1 cup butter softened
  • 1 ¼ cups granulated sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 Tbsp lemon zest
  • 2 Tbsp lemon juice
  • 2 ½ cups flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line 2 large cookie sheets with parchment paper.
  3. In a large bowl, cream the butter and sugar together until light and fluffy.
  4. Add egg, vanilla, lemon zest and juice; beat until combined.
  5. Add in remaining dry ingredients.  Mix until just combined.
  6. Roll lemon sugar cookie dough into small balls.
  7. Bake lemon sugar cookies for 10-12 minutes, or until cookies have set.
  8. Remove lemon sugar cookies and let cool 2-3 minutes before removing from the baking sheet and onto the cooling rack.

Recipe Notes

Store them in an airtight container at room temperature for up to 5 days. For longer storage, freeze baked cookies for up to 3 months.
