Ingredients

  • ½ cup pancake mix
  • ½ cup water or milk

Instructions

  1. In a microwave-safe bowl, combine the pancake mix and water.
  2. Stir until the mixture is smooth and free of lumps.
  3. If the batter is too thick, add a bit more water (a teaspoon at a time).
  4. For a fluffier pancake, use a little less water.
  5. Microwave on high for 1 to 1.5 minutes.
  6. Check the pancake at the 1-minute mark; it should be set in the middle and slightly puffed.
  7. Microwaves vary in power. If your pancake isn't fully cooked after 1.5 minutes, continue microwaving in 15-30 second intervals until done.
