Ingredients

  • 1 15.25 oz. box of lemon cake mix
  • 2 eggs
  • 1 stick of unsalted butter softened
  • ½ cup powdered sugar
  • 1 ½ tbsp. Fresh lemon juice

Instructions

  1. Preheat your oven to 350 degrees.
  2. Spray a 9x13 inch pan with nonstick cooking spray and set aside.
  3. In a large mixing bowl, combine cake mix, eggs, and softened butter, mixing until the cake mixture forms a dough.
  4. Press the lemon dough into the bottom of the baking dish, spreading evenly to the edges of the pan.
  5. Bake at 350 for 16-18 minutes, until the top begins to turn golden brown.
  6. Allow the homemade lemon bars to cool. 
  7. In a medium bowl, whisk together powdered sugar and lemon juice.
  8. Drizzle the lemon glaze on top of the cake
  9. Once the tangy lemon bar cake is cool, cut into lemon squares. 

Recipe Notes

Lemon bars should be stored in an airtight container at room temperature for up to 3 days. If you want to keep them for longer, you can refrigerate them for up to a week.
