Chocolate Icebox Cake Recipe

Chocolate Wafer Icebox Cake is the easy no-bake dessert everyone needs! Just layer pudding, whipped cream, and crisp cookies for a chilled, creamy treat.

Ingredients

  • 2 packages Chocolate Cookies
  • 2 - 5.9 oz boxes chocolate pudding mix
  • 1 - 12 oz Cool Whip
  • 1 cup additional Cool Whip
  • 2 ¼ cup Milk

Instructions

  1. In a large bowl, mix together pudding with milk. 
  2. Mix in cool whip. 
  3. Spray the bottom of a loaf pan with non-stick spray. Wrap the pan with plastic wrap. 
  4. Spread about a half cup of cool whip on the bottom of the pan. 

  5. Layer the bottom with wafer cookies

  6. Top with pudding mix. 
  7. Top with additional wafers. Repeat until you reach the top, stopping with a layer of cookies. 
  8. Wrap with plastic wrap and refrigerate for a minimum of 4 hours or overnight. 
  9. Remove the cake from the pan, the bottom will become the top. 
  10. Spread additional cool whip on the top and garnish your chocolate icebox cake with mint and fresh berries.

Recipe Notes

Your cake will taste the best within the first couple days, but will stay fresh for 3-5 days in the fridge.
