Instructions
Preheat oven to 350 degrees F.
Pat salmon fillet dry with paper towels.
Place salmon skin side down on a sheet pan lined with parchment paper or a silicone baking mat.
Season salmon with salt, pepper and paprika. Set aside.
To make the citrus salmon glaze, zest and juice the lemon and orange in a small bowl. Combine the orange juice and lemon juice with the olive oil. Pour half over the top of the salmon.
Sprinkle the lemon and orange zest over the salmon, then place in the oven for 30 minutes.
Meanwhile, place the sliced red onions in a bowl and toss with half of the remaining olive oil-juice mixture (about 2 Tablespoons).
After 30 minutes, remove the salmon from the oven and sprinkle the onions overtop.
Return salmon to oven and continue to bake for 10-15 extra minutes until the thickest part of the salmon reaches an internal temperature of 135F.
Combine the last bit of the olive oil-juice mixture with the cilantro and parsley leaves.
Once the salmon is done baking, drizzle the oil-herb mixture overtop.
