Crush the cookies in a food processor or put in a plastic bag and crush.
Add the crushed cookies to a large bowl or stand mixer. Add in the cream cheese. The softer the cream cheese the better.
Blend the cookies and cream cheese together. Scoop out small balls onto a sheet pan.
Place in the freezer for a minimum of a half hour to harden the balls to make them easier to coat in chocolate.
Melt the chocolate in 30 second intervals until uniformly melted.
Remove the balls from the freezer. Place each ball in the chocolate and coat.
Sprinkle gold sprinkles on top.
