Pineapple Cupcakes

Ingredients

  • 1 box Yellow Cake Mix
  • 1 cup Pineapple Juice
  • 1/2 cup Vegetable Oil
  • 3 eggs
  • Vanilla Frosting
  • 1-2 drops Yellow Food Coloring
  • Toasted Coconut Flakes

Instructions

  1. Prepare cake mix according to package directions, substituting pineapple juice for the water.

  2. Preheat oven to 325 degrees and line a cupcake pan with cupcake liners. 

  3. Fill 6 cups with 2/3 cups of batter. 

  4. Bake 15-20 minutes or until a toothpick comes out clean. 

  5. Let cool. 

  6. Add 1-2 drops of yellow food coloring to vanilla frosting. 

  7. Frost cupcakes and top with toasted coconut.
