Red Wine Chocolate Cupcakes

Ingredients

  • 1 1/2 cups red wine
  • 2 eggs
  • 3 tbsp canola oil
  • 1 tsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 3/4 cup cocoa powder
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 3/4 tsp baking powder
  • 1 cup butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup red wine

Instructions

  1. Combine wine, eggs, oil and vanilla in a large bowl. Combine the flour, sugar, cocoa, baking soda, salt, baking powder in a separate bowl. Beat the dry ingredients into the wine mixture until the two are well combined.
  2. Fill cupcake liners about half way and bake at 350 degrees for about 18-20 minutes. Cool on a wire rack completely before frosting.

  4. Beat the butter until fluffy. Add red wine and vanilla extract to combine with the butter. Gradually add all of the powdered sugar to combine.
