Pumpkin Cake with Pecan Topping

The pecan topping in this pumpkin cake adds a sweet and delicious crunch.

Ingredients

  • 2 cups flour all purpose or gluten free, add 2 tsp xantham gum if using GF
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 4 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 15 oz canned or homemade pumpkin
  • 1 cup pecans
  • 1/4 cup honey

Instructions

  1. Preheat oven to 350 degrees
  2. Combine flour, baking powder, baking soda, salt, spices.
  3. In a large bowl combine eggs, oil, sugar and pumpkin.
  4. Add the wet ingredients to the dry.
  5. Add mix to a prepared pan.
  6. bake for 30 minutes or until a toothpick comes out clean.
  7. In a saucepan, brown pecans and honey together. For added taste, add a few tablespoons of amaretto!
