Pumpkin Cake with Pecan Topping
The pecan topping in this pumpkin cake adds a sweet and delicious crunch.

- 2 cups flour all purpose or gluten free, add 2 tsp xantham gum if using GF
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp baking powder
- 1 tsp baking soda
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 15 oz canned or homemade pumpkin
- 1 cup pecans
- 1/4 cup honey
Preheat oven to 350 degrees
Combine flour, baking powder, baking soda, salt, spices.
In a large bowl combine eggs, oil, sugar and pumpkin.
Add the wet ingredients to the dry.
Add mix to a prepared pan.
bake for 30 minutes or until a toothpick comes out clean.
In a saucepan, brown pecans and honey together. For added taste, add a few tablespoons of amaretto!
