Trail Mix Oatmeal Cookies

Delicious cookie for breakfast or that afternoon slump made with trail mix, oats and whole grains!

Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 brown sugar
  • 1/4 cup honey
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cup oats
  • 3/4 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup Power Up Trail Mix

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line baking sheets with parchment paper.
  3. Mix together butter, sugar and honey in a small bowl.
  4. Add egg and vanilla.
  5. In a separate bowl, mix together flour, oats, salt, baking powder and cinnamon.
  6. Add the dry ingredients to the wet ingredients and mix well.
  7. Fold in the Power Up trail mix.
  8. Using a cookie scoop, scoop 2 tbsp of mix into balls on the baking sheets.
  9. Bake 10-12 minutes until the cookies are done on the edges.
  10. Cool the cookies on a wire rack.
