Are you a big fan of squash? We love yellow squash, especially in the summer, for an easy summertime side for our BBQs. However, it is a SUPERFOOD that is an awesome swap for your recipes. There are several types of squash including butternut, yellow, and spaghetti. You may have a ton of recipes for these types of squash, but you may not know all of its benefits. Here are a few reasons why you should add more squash to your weekly meal plan!
Why You Should Eat More Squash
It’s good for pregnancy. Did you know that many doctors tell expectant mothers to eat more squash? One of the benefits is that it has an effect on neural tube issues and defects. I had no idea until recently when a friend mentioned this to me. The folate in squash can help bring nutrients to your baby. Cool, right?
It’s good for your immune system. We never want to get sick during most of the year, though sometimes, you might get a surprise illness. If you want to boost your immune system, you can try over the counter pills, smoothies, or other supplements. Or, you can also enjoy more squash! Replace your pasta with spaghetti squash (so easy to make!) or try butternut squash soup. YUM!
It’s good for blood circulation. As you get older, blood circulation may be something that you need to be careful with. There are many remedies including medications and supplements, but you can also enjoy more squash. The vitamins in squash (including folate and riboflavin) are meant to increase overall circulation.
It’s affordable. When you shop seasonal squash, you can enjoy added savings. I usually can buy pre-sliced squash for $2 or less! It is a hearty side and easy to prepare. My favorite way to enjoy squash is sliced super thin and sauteed in a small skillet with garlic and seasonings. Enjoy!
It’s versatile. It’s a vegetable that can be used for many different dishes. From soups to pasta to casseroles, you can find a way to sneak squash into more of your meals without a lot of hassle.
These benefits can be enjoyed with many varieties of squash. If you don’t like spaghetti squash, try yellow! Seasonal squashes are usually offered in a vegetable medley at restaurants so you can enjoy this vegetable more often. Here’s to healthier eating on a budget!
