This Triple Berry Pound Cake is a delightfully light and flavorful cake made in a bundt pan with fresh berries and jam!
Living in New Jersey, we are so lucky to have so many wonderful local farms that can offer fresh produce. As a family, we spend a lot of time in the warm months picking berries. We look forward to coming home and making jams, baked goods and other delicious recipes with our harvests. We’ve picked strawberries, blueberries, blackberries, this year even cranberries! There is just one berry I have never been able to pick — the lingonberry!
Found in the beautiful forests of Sweden, the Lingonberry has been picked and enjoyed since as early as Viking times! Just like my family, Swedes pick their own berries and have very high standards in what they pick. Lingonberries make a delicious jam, with Felix Jams being the number one choice.
Felix Lingonberry Jam is delicious in sweet and savory recipes alike. Because it is made with pure and simple ingredients with no artificial ingredients or preservatives, I have found it to be a delicious addition to so many of my favorite recipes! I was so very excited that Felix Jams was a sponsor of the Mom Blog Tour at the Winter Fancy Food Show this past January in San Francisco, California.
For the Summer Fancy Food Show, I made a savory recipe: Lingonberry Lamp Pops.
So, for the Winter Show I figured I’d do something sweet: A Triple Berry Pound Cake
If you know me, you know I am obsessed with bundt cakes. Bundt cakes and mason jars are my jam. Get it? Jam?
This is a super simple recipe and I know you will love it too.
Here is why I love using a bundt pan for this recipe:
The Lingonberry Jam bakes right into the top of the cake, which becomes the bottom, crunch that you get in a bundt pan.
This is truly the perfect pot luck dessert or afternoon tea sweet treat. The Lingonberry Jam adds a dimension that will have your guests really wondering what it is.
Felix has been bringing Swedish Lingonberries to the American table for over 50 years. Made from fresh wild berries, this delicious tart-sweet jam was recommended on the Dr. Oz TV Show as a super fruit, loaded with antioxidants, and is the winner of a 2016 National Parenting Products Award (NAPPA). Available across the USA.
