Hooray for being Team Pumpkin just like me! I’ll tell you, I am always looking for new ways to enjoy pumpkin. This Pumpkin Cobbler is perfect warm with a big scoop of vanilla ice cream on top!

Oh and you know the best part of this recipe? The sauce on the bottom! You just have to spoon it over the ice cream! There’s nothing better than scooping up a spoonful of the spiced cake with the pumpkin filling and ice cream!

How to Make a Pumpkin Cobbler 

The full printable recipe with ingredients and instructions is below.

You’ll need to have on hand: 

flour
baking powder 
salt 
sugar 
pumpkin pie spice 
pumpkin puree 
milk 
butter 
vanilla 
brown sugar 
chopped pecans

Step 1: Preheat your oven to 350 degrees, and spray a 9×9 baking dish with non-stick cooking spray

Step 2: In a large bowl, whisk together flour, baking powder, salt, sugar, and pumpkin pie spice. I

Step 3: In a separate bowl, whisk together pumpkin puree, milk, melted butter, and vanilla.

Step 4: Pour the wet ingredients into the dry, mixing until just combined. 

Step 5: Spread dough into the bottom of your 9×9 pan.

Step 6: In another bowl, stir together topping- brown sugar, sugar, and chopped pecans. 

Step 7: Sprinkle topping evenly over the dough. Pour hot water over the topping.

Step 8: Bake for 40 minutes, until the middle of the cobbler is cakey. 

Serve your pumpkin cobbler with some sauce of the bottom of your cake pan and a scoop of vanilla ice cream.

Ingredients

  • • 1 1/4 cup flour
  • * 2 tsp baking powder
  • * 1/2 tsp salt
  • * 3/4 cup sugar
  • * 2 tsp pumpkin pie spice
  • * 1/2 cup pumpkin puree
  • * 1/4 cup milk
  • * 1/4 cup butter, melted
  • * 1 tsp vanilla
  • * 1/2 cup sugar
  • * 1/2 cup brown sugar
  • * 1/2 cup chopped pecans
  • * 1 1/2 cup hot water

Instructions
