I often forget about pork as a delicious dinner option, so having the Niman Ranch Heritage Pork right at my finger tips made it the perfect time to try something new. They were so easy to cook too! Simply remove the loin chop from the package, cook and serve!

The sprig of fresh rosemary gave me a sense of the fall/winter, so I thought serving it with our favorite seasonal side would be perfect: Twice Baked Sweet Potatoes. 

These twice baked sweet potatoes have a delicious maple and pecan topping that pairs just perfectly with the smoky, savory touch of the pork. 

How to make this Twice Baked Sweet Potato recipe:

Bake your sweet potatoes – Here is a little tip, after washing your sweet potatoes, drizzle with extra virgin olive oil and sprinkle with sea salt. Then rub them down to fully coat with the oil and salt. Wrap in tin foil. I have found this really helps getting them baked perfectly. 

Make the filling – After the potatoes have cooled enough to handle, slice them in half. Scoop out the insides into a medium sized bowl. Put the skins to the side. Mix in sour cream, pumpkin pie spice, brown sugar and maple syrup. Mash until smooth. 

Fill the potatoes – Scoop your filling into the skins on a baking sheet. A few tablespoons will do just fine. 

Make the pecan topping – In a small bowl, melt butter. Then mix in chopped pecans and brown sugar. Mix until the pecans are fully coated. Sprinkle over your sweet potatoes. Drizzle any leftover butter on top as well. 

Bake for about 15 minutes until the topping looks crisp and bubbling.

You're going to love these twice baked sweet potatoes! Full of pecans, cinnamon, brown sugar and butter, they're almost like dessert!

Ingredients

  • 4 medium sweet potatoes
  • 1/2 cup sour cream
  • 1/2 tablespoon pumpkin pie spice
  • 1 tablespoon maple syrup
  • 3 tablespoons brown sugar
  • For the topping:
  • 2/3 cup chopped pecans
  • 2 tablespoons butter
  • 2 tablespoon brown sugar
