How to Make Patriotic Whoopie Pies

Ingredients: 

  • 1 box white cake mix
  • 1 cup soft butter, divided
  • 2 large eggs, at room temperature
  • 3 1/2 cups powdered sugar
  • 2 tsp vanilla
  • 8 oz cream cheese
  • red and blue food coloring

Instructions

Line a baking sheet with parchment paper. The parchment allows your whoopie pies to get a puffier texture. 

Mix together your wet ingredients in a medium bowl and then add your dry ingredients (the cake mix).

Divide your batter among 2 bowls. Add a few drops of red food coloring to one bowl, mixing well. Continue adding food coloring until you get your desired shade of red. Repeat this process for the blue in the other bowl.

Using a small ice cream scoop, drop 2 tablespoons of batter onto the prepared baking sheets and bake 10-12 minutes.

When they are done baking, let your whoopie halves cool on cooling racks.

While they are cooling, make your cream cheese frosting.

In a large bowl, using an electric mixer or stand mixer, cream butter, vanilla and cream cheese with the whisk attachment on medium speed until fluffy. 

Add in confectioners’ sugar to butter mixture and beat on low speed.

Place your frosting into a pastry bag if using. Once your whoopie pies are cooled, pipe icing or spoon a heaping tablespoon of filling onto one of the flat side of the blue cookies and then top with a cookie of another cookie to make a red and blue combo.

Add your red, white and blue sprinkles to a bowl. Roll edges of your whoopie pies in the sprinkles. Set up a wire rack with a cookie sheet or baking pan underneath to catch any frosting that may drip down.

  • Red & blue gel food coloring
  • Patriotic sprinkles

Instructions

  1. Preheat your oven to 375 degrees and line a baking sheet with parchment paper. 
  2. In a large bowl, mix together cake mix, 1/2 cup butter, and 2 eggs. 
  3. Divide dough evenly between two bowls.
  4. Add a few drops of red food coloring to one bowl, mixing well. Continue adding food coloring until you get your desired shade of red. 
  5. Repeat this process for the blue in the other bowl
  6. Drop cookie dough by rounded spoonfuls onto the parchment paper. 
  7. Bake 10-11 minutes.
  8. Meanwhile, in a large bowl, mix 1/2 cup butter, cream cheese, and vanilla until fluffy. 
  9. Mix in powdered sugar. 
  10. Once cookies are cooked and cooled, pipe icing onto one cookie and top with another cookie. 
  11. Be sure to flip the cookies over so you have a flat surface on both sides of the icing. 
  12. Hold your patriotic whoopie pies sideways and rotate to sprinkle with fun patriotic sprinkles. Enjoy!
