No Bake Granola Bars
With the beautiful weather upon us, it seems we are constantly on the go from one thing to the next. The days of being cooped up inside with cabin fever are over. I learned rather quickly to always have snacks and drinks for the kids to keep them happy and energized. But you know who I just could never remember to take care of? Me! This often left me snacking on the kid’s few and far between leftovers and never really feeling nourished and content.
So my goal this summer was to make sure that this mom was just as prepared for herself and she was for the kids! With that in mind, I decided some No Bake Granola Bars were just the thing to have on hand.
Because cereal has so many more uses beyond just pouring it in a bowl with milk, I decided to use Raisin Bran’s Cranberry Almond Granola to save time and add a lot of flavor! I found the Raisin Bran Cranberry Almond Granola in the cereal aisle at Acme.
To make your No Bake Granola Bars, start by measuring out 2.5 cups of the Raisin Bran Cranberry Almond Granola in a large bowl.
In a saucepan, melt butter, honey and brown sugar together. When it comes to a bubble, add vanilla, reduce heat and simmer for 2-3 minutes.
Pour over the granola in the large bowl.
After mixing your granola bar mix together, spread it out in a jelly roll pan that has been coated with butter. Recently, a blogger friend of mine gave me a great tip! Save the wrappers from your butter in your freezer and then use them to prepare your pans!
If you’re having a hard time getting an even layer of the granola bars, use a fork or potato masher to press them down and together. For extra fun, I added some miniature chocolate chips on top as well.
I really enjoyed using the Raisin Bran Cranberry Almond Granola because it was filled with all kinds of delicious things like granola clusters, puffed grains, crisp flakes, raisins, cranberries and almonds!
Let your No Bake Granola Bars sit on the counter for a few hours to cool. Slice them and wrap in parchment paper to have a delicious snack whenever you need!
No Bake Granola Bars
Easy and delicious no bake granola bars to have whenever you need a snack on the go!
- 2.5 cups of Raisin Bran Cranberry Almond Granola
- 1/4 butter
- 1/4 honey
- 1/3 cup brown sugar
- 1 tsp vanilla
- 2 tbsp miniature chocolate chips (if desired)
- Melt butter, honey and brown sugar and bring to a bubble in a small saucepan.
- Add vanilla and simmer for 2-3 minutes.
- In a large bowl, add Raisin Bran Cranberry Almond Granola.
- Pour butter mixture over the Raisin Bran Cranberry Almond Granola and combine.
- In a prepared jelly roll pan, spread the Raisin Bran Cranberry Almond Granola mixture out.
- Let cool for 2-3 hours at room temperature.
- Slice and wrap in parchment or plastic wrap.
