New Jersey’s Favorite Breakfast: Pork Roll, Egg & Cheese

When I heard about this fun contest, I knew immediately I wanted to share a traditional New Jersey breakfast: the Pork Roll, Egg and Cheese sandwich.
To make a Pork Roll, Egg and Cheese sandwich:
- In a skillet, fry up slices of pork roll, approximately 1/4 inch thick each.
- Slightly slice a small cut into each of the 4 sides of the pork roll.
- Remove from the pan when finished cooking on both sides.
- Fry 2 Eggland’s Best eggs to your liking.
- Melt a piece of American cheese on each egg.
- Make a sandwich with the pork roll, egg and cheese on a bagel or kaiser roll.
- Top with salt, pepper and ketchup!
