We brought home two of the world’s most beautiful pumpkins during our recent visit to the Poconos. They were so beautiful, we *almost* felt bad carving them up. We carved one and then the other my husband sliced and roasted this week.
When I asked him what he was going to do with his roasted pumpkin, I quickly realized he had no plan whatsoever. Which worked out to my benefit because do you know how many amazing things I can make in a day with pumpkin?
Delicious homemade Pumpkin Butter recipe made with roasted fresh pumpkin.
- 3 Sugar Pumpkins (Sliced )
- 2 cups brown sugar
- 4 tsp Pumpkin Pie Spice
- pinch salt
- 4 tbsp butter
- 1 tsp pumpkin pie spice
- 1/4-1/2 cup apple juice or apple cider ((if needed))
Preheat oven to 350 degrees
Slice pumpkin and place on a baking sheet lined with parchment paper.
In a small bowl, mix together brown sugar, salt and pumpkin pie spice. Sprinkle on top of the pumpkin meat.
Sprinkle the tops with the butter.
Roast pumpkin until you can pierce with a toothpick easily – about 45 min to 1 hour.
Let the pumpkin cool until you can handle it.
Slice pumpkin off of the skin.
Add pumpkin meat into a blender, if you find you need some more liquid to help it puree, use the juices on the bottom of your roasting pan. If you still need any additional, use a little bit of apple juice or cider.
Add an additional 1 tsp of pumpkin pie spices.
Puree until pumpkin butter is smooth.
Pour into a mason jar and keep refrigerated.
Now that you have your jar of Pumpkin Butter ready and it’s delicious, what can you use it with? Of course, enjoying it with some toast or on an english muffin works. Or how about spooning it into your Greek yogurt and topping with some granola?
