For Mom: Delicious Breakfast Bowl
I find that once back to school begins, I am running around and often forget to eat. I try to make quick and nutritious breakfast options that don’t leave me ravenous later on in the day.
One of my favorites is a delicious breakfast bowl. Forget the plate and throw all of your favorites in a big bowl! Right now, I am enjoying baby spinach, sweet potatoes, avocados and eggs.

For Mom: Delicious Breakfast Bowl
Ingredients
- 2 cups baby spinach
- 2 eggs
- 1/2 ripe avocado
- 1 sweet potato diced
Instructions
- Dice and roast sweet potatoes for about 30 minutes at 350 degrees.
- Wilt spinach on the stovetop with olive oil.
- Fry eggs.
- Mash avocado.
- Add all ingredients to a bowl.
- Enjoy
Save time by cooking up a big batch of sweet potatoes and spinach ahead of time to enjoy all week.
