These Fish Tacos with Pineapple Salsa are just the thing to hit the spot on a warm summer day!

The weather is really starting to heat up. In fact, we are deep in the middle of a heat wave right now. 

These Fish Tacos with Pineapple Salsa are just the thing to hit the spot on a warm summer day!

Throughout the summer, I really love to focus my time on having summertime fun with my family. There’s nothing worse than slaving away in a hot kitchen for hours in the summertime. So, I love quick meals that are full of flavor and inspired by colorful living matter how hot it is outside!

What you need to make these Fish Tacos with Pineapple Salsa:

For the fish:
1 1/2 lbs striped bass, cod or another type of white, flaky fish
3 tbsp olive oil 
1 lime 
2 tsp chili powder
1 tsp paprika
1/2 tsp ground cumin

For the salsa: 
1 fresh Pineapple, diced
2 plum tomatoes, diced 
2 handfuls of cilantro, chopped 
1 lime, juiced
salt & pepper
2 avocado, diced 

On a baking sheet, lay the fish flat. Drizzle with olive oil & juice from half of a lime. Sprinkled spices over the fish. Cook for 10-15 minutes until the fish browns and easily flakes with the touch of a fork.

So many of my friends are always intimidated by cooking fish. There is nothing to be afraid of! It’s so easy! Once the fish starts flaking with the touch of your fork, it’s done! 

To make your pineapple salsa, combine all ingredients together.
