How to Make Creamy Lemon Chicken

Ingredient Checklist:

  • 4-6 Chicken Thighs, bone-in and skin-on
  • Salt and Black Pepper, to taste
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 1 cup chicken stock
  • 1-2 Tablespoons Lemon Juice, to personal preference
  • 3 garlic cloves, minced
  • 1/2 Onion, diced
  • 1/2 cup Milk
  • 1 Tablespoon Corn starch
  • Lemon zest or lemon wedges, optional garnish
  • Parsley, optional garnish

INSTRUCTIONS

Preheat the oven to 375 degrees.

Pat chicken dry with a paper towel and season with salt and pepper.

Heat oil and melt butter in a large skillet over medium heat.

Add chicken to the skillet and cook chicken 2-3 minutes on each side until browned.

In a measuring cup, stir together chicken broth, lemon juice and garlic.

Once chicken is browned all over, remove to a clean plate.

Use your spatula to scrape the browned bits from the bottom of the pan.

Add onion to skillet and saute until softened and transparent.

Add broth-garlic mixture to the skillet.

Increase heat to medium-high heat and bring to a boil. Reduce heat to medium and simmer until broth has reduced by half.

Once broth has reduced, add the butter to the skillet, then whisk the cornstarch into the milk and pour into the skillet.

Place the golden crispy chicken back in the skillet and bake in the oven for a cook time of 15-20 minutes until the internal temperature 165F.

Spoon lemon cream sauce over the cooked chicken and garnish with lemon slices and parsley, if desired.
