Confetti Surprise Cupcakes
As much as I love baking, it is not my strong suit by any means. I always said that one of my goals was to be able to decorate baked goods to look presentable.
I’ve been practicing on these Confetti Surprise Cupcakes, can you tell?
I made these pretty vanilla cupcakes for my daughter to celebrate her dance recital last month. And guess what? They have a little surprise in them!
What’s fun about this recipe is that you can use it for really any occasion! I would love to make them for a friend’s gender reveal, birthday parties, new year’s eve and more!
Adults and kids alike will love how exciting it is to bite into these Confetti Surprise Cupcakes!
They’re filled to the brim with these fun candy pieces! I used my favorite vanilla cupcake recipe, used an apple corer to remove the center, filled up the center with candy and then put the top back on before frosting! See, easy!
How to make Confetti Surprise Cupcakes
After baking your favorite cupcake recipe (I highly suggest either this vanilla cupcake or this chocolate cupcake recipe), let your cupcakes cool on a cooling rack.
When your cupcakes are cool, using an apple corer or a paring knife, cut roughly a one inch piece of cupcake out. Place to the side.
Fill the empty space in your cupcake with your favorite sprinkles or candies. Put the piece of cupcake right back over the candies.
You may need to trim the cupcake piece slightly to have it fit snug and flush with the rest of the cupcake.
Now you can frost your cupcakes with your favorite frosting recipe! If you are a chocolate fan, be sure to use my chocolate frosting recipe!

Notes
Like most cupcakes, you make these confetti surprise cupcakes a day ahead of time. Store your cupcakes at room temperature.
