How to Make Quick and Easy Breakfast Quesadillas Recipe

These easy breakfast quesadillas are made with sausage, eggs and cheese. The best part? They are a super easy and delicious breakfast for the entire family for any day of the week!

Breakfast food is my favorite meal of the whole day. This breakfast quesadillas recipe is a great way to start the day and you know how much I love an easy meal. They are perfect for busy mornings.

How to Make Your New Favorite Breakfast – Breakfast Quesadillas

You will need:

  • 4 Eggs
  • 1/2 cup Shredded Cheese
  • 1/2 cup Chopped Breakfast Sausage
  • 2 Flour Tortillas
  • 1 tablespoon butter

Start with whisked eggs over medium-low heart in a large nonstick skillet, until you have nice fluffy eggs. Season with a pinch of salt and black pepper.

In a separate large skillet, cook your fillings with a silicone spatula while your eggs are cooking over medium heat. Drain any excess grease.

Mix in your fillings with your scrambled eggs.

Melt butter in your skillet and add half of the tortilla.

In a single layer, add your egg mixture and on top of the egg in a thin layer add sharp cheddar cheese or a slice of cheese such as monterey jack.

Fold tortilla and cook medium-high heat on both sides until your tortilla is golden brown and your cheese melts.

Cut your crispy tortillas on a cutting board with a pizza cutter and serve with a side of salsa, homemade guacamole and sour cream on top of the quesadilla.

How to Freeze Breakfast Quesadillas

Line a baking sheet with parchment paper. Freeze your quesadillas for 2-3 hours and then transfer your frozen quesadillas to a freezer safe bag or wrap in plastic wrap. Reheat, in the air fryer, toaster oven or on the stovetop on medium-low heat for a little bit until cooked through.

Instructions

First, you need some eggs. Scramble your eggs to your liking, season with salt and pepper. 

Cook your fillings while the eggs are cooking. 

If you are using vegetables, you will want to saute them in a pan with a little bit of olive oil until they are soft.

Mix in your breakfast quesadilla fillings to your eggs. 

Melt butter in a pan and place a tortilla in the skillet. 

Fill one side of the tortilla with your egg filling. Top with shredded cheese. 

Fold your breakfast quesadillas over and cook on both sides until the cheese is melted and the tortilla is crisp, about 2-3 minutes per side.

Serve breakfast quesadillas with salsa and sour cream.
