Meal Prep Hack + Avocado Egg Salad

Over the last year, I have taken on more and more responsibility. I am a serial volunteer and just can’t seem to ever put my hand down. I have found myself with less time as a result and really have let myself go. As we find ourselves in the new year, I am working on making time for myself again! One of the things I have done in the past with great success has always been taking the time to meal prep.

Meal Prep Hack + Avocado Egg Salad

The quote “Failing to plan, is planning to fail” is so true. I like to take some time at the beginning of the week to plan my week and meal prep. I love eating hard boiled eggs as a quick breakfast, a snack, for lunch, or really anytime of the day! My meal prep hack? I buy Great Day Farms Hard-Boiled Eggs, found in the deli section of my local Walmart.

One of my favorite ways to enjoy these hard-boiled eggs lately has been Avocado Egg Salad.

Avocado Egg Salad

  • 2 hard boiled eggs
  • 1/2 ripened avocado
  • salt & pepper
  1. Chop 2 hard-boiled eggs. 

  2. Cut avocado in half. Save half for another time and scoop the other half into a bowl with the hard boiled eggs. 

  3. Mix together with salt and pepper to taste.

This is so simple & so good! We raise our own chickens, so having eggs around is not really an issue for us, but the convenience of having them already hard boiled is super nice! I am limited to the proteins I can eat. Eggs are are the top go to for me & you can't go wrong with avocado's!! Thank you for sharing the recipe!
