This Apple Butternut Squash Casserole with Bacon-Pecan Topping is perfect for the Fall months and would even be wonderful as a Thanksgiving side dish.

This time of the year, I am all about seasonal fruits and vegetables. I probably buy a few types of winter squash every week. I absolutely love how versatile they are and they pair so well with foods like apples and nuts. This casserole would pair well with pork chops or a tenderloin!

So how do you make this delicious fall Apple Butternut Squash Casserole?

You will need: 

1/4 cup olive oil
3 cups butternut squash, diced
2 medium apples, diced
1 small red onion, diced
1 1/2 tsp fresh sage, chopped
1 1/2 tsp fresh thyme
salt & pepper to taste
6 slices thick cut bacon, chopped into 1/2″ pieces
1/2 cup pecans, roughly chopped
2 tbsp honey
1/2 tsp ground cinnamon
1/4 tsp cloves

Preheat oven to 400°F and grease a 9×13” baking dish with oil or butter. Set aside.

In a large mixing bowl, combine the squash, apples, onion, oil, sage and thyme. 

Season with salt and pepper to taste and toss to combine. 

Transfer your butternut squash mixture to your baking dish and spread into an even layer. 

Roast in your preheated oven until the squash is fork tender, about 25-30 minutes. 

While the squash mixture is roasting, heat a large saute pan over medium heat and cook your bacon. Cook, stirring occasionally, until the bacon is cooked through and crispy, about 8-10 minutes. 

Transfer the bacon to a small mixing bowl lined with paper towels to absorb any excess any grease. 

Blot off the remaining grease on top and set aside to cool for about 10 minutes. 

Once cooled, discard your paper towels and add the remaining oil, chopped pecans, honey, cinnamon, and cloves. Season with salt and pepper, toss to combine. 

Remove your Apple Butternut Squash Casserole from the oven and top with the bacon-pecan mixture. 

Return the casserole to the oven until the topping is nicely browned, about 10 minutes. 

Remove from the oven and let your Apple Butternut Squash Casserole cool about 5 minutes before serving.

    6. Cook, stirring occasionally, until the bacon is cooked through and crispy, approximately 8-10 minutes.
    7. Transfer the bacon to a small mixing bowl lined with paper towels to absorb excess grease.
    8. Blot off remaining grease on top and set aside to cool for 5-10 minutes.
    9. Once cooled, discard the paper towels and add the remaining tablespoon of  oil, chopped pecans, honey, cinnamon, and ground cloves.
    10. Season with salt and black pepper, as desired, and toss to combine. 
    11. Remove squash from oven and top with the bacon-pecan mixture.
    12. Return to the oven until the topping is nicely browned, approximately 10 minutes.
    13. Remove from oven and cool for 5 minutes before serving. Enjoy!
