Over the last year, I have taken on more and more responsibility. I am a serial volunteer and just can’t seem to ever put my hand down. I have found myself with less time as a result and really have let myself go. As we find ourselves in the new year, I am working on making time for myself again! One of the things I have done in the past with great success has always been taking the time to meal prep.
Meal Prep Hack + Avocado Egg Salad
The quote “Failing to plan, is planning to fail” is so true. I like to take some time at the beginning of the week to plan my week and meal prep. I love eating hard boiled eggs as a quick breakfast, a snack, for lunch, or really anytime of the day! My meal prep hack? One of my favorite ways to enjoy these hard-boiled eggs lately has been Avocado Egg Salad.
Avocado Egg Salad
- 2 hard boiled eggs
- 1/2 ripened avocado
- salt & pepper
Chop 2 hard-boiled eggs.
Cut avocado in half. Save half for another time and scoop the other half into a bowl with the hard boiled eggs.
Mix together with salt and pepper to taste.
