How to Make Patriotic Whoopie Pies

Ingredients: 

  • 1 box white cake mix
  • 1 cup soft butter, divided
  • 2 large eggs, at room temperature
  • 3 1/2 cups powdered sugar
  • 2 tsp vanilla
  • 8 oz cream cheese
  • red and blue food coloring

Instructions

Line a baking sheet with parchment paper. The parchment allows your whoopie pies to get a puffier texture. 

Mix together your wet ingredients in a medium bowl and then add your dry ingredients (the cake mix).

Divide your batter among 2 bowls. Add a few drops of red food coloring to one bowl, mixing well. Continue adding food coloring until you get your desired shade of red. Repeat this process for the blue in the other bowl.

To achieve evenly sized whoopie pies, use a cookie scoop or spoon to portion out the batter onto the baking sheets. This ensures consistent sizes and shapes for uniform pies.

Using a small ice cream scoop, drop 2 tablespoons of batter onto the prepared baking sheets and bake 10-12 minutes.

While they are cooling, make your cream cheese frosting.

In a large bowl, using an electric mixer or stand mixer, cream butter, vanilla and cream cheese with the whisk attachment on medium speed until fluffy.

  11. Be sure to flip the cookies over so you have a flat surface on both sides of the icing.
