Trout season opened up here in New Jersey about a month ago. After a fishing trip to a local river, we preserved our catch with the Big GameTM until we were ready to smoke it, which is our favorite way to enjoy fresh trout.
How to Make Smoked Trout in Your Oven
Smoked Trout in the Oven
- 1/2 gallon water
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup salt
- 2 tbsp garlic powder
- 3 tbsp lemon juice
This recipe is for 5-7lbs of fresh Trout.
In a large baking dish, pour in brine, place fish into brine.
Brine the fish for about 8 hours in the refrigerator.
Remove from brine, rinse off fish in cold water. Pat dry.
Lay fish onto the racks of your oven.
Preheat oven to 180-200 degrees. Smoke fish until done, about an hour and half to 2 hours.
Vacuum seal the fish when cool with the FoodSaver GameSaver.
Store in the refrigerator or freezer.
