When it comes to the kid’s snacks, I have that down pat. But, for my husband and I? We’ve been wanting something a little bit more grown up. I have been really craving a Greek salad lately and after I didn’t have any lettuce or greens, I decided some of the delicious new chickbean snacks I had in the cabinet would be the perfect base for my Greek salad, making it “Greek Nachos”.
I had the opportunity to taste Saffron Road’s new chickbean crisps this past Winter at the Winter Fancy Food Show with the Mom Blog Tour. Saffron Road’s chickbean crisps are their latest innovation! Made from lentils, yellow peas, garbanzo (chickpea) and sweet potato flours, they’re great for snacking!
They’re available in 3 flavors: sea salt, white cheddar and zesty ranch and are vegetarian, certified halal, soy free, kosher and gluten free. Because they’re made with all plant based proteins, there is 4g of protein and 2g of fiber per serving! The chickbean crisps are free completely from artificial flavors, colors and preservatives, making what you see what you get!
So now that you know why these Saffron Road Chickbean Crisps are my new favorite snack, here is how you can make some delicious Green Nachos for yourself!
- 1 bag Saffron Road Sea Salt Chickbean Crisps
- Diced tomatoes
- Diced cucumbers
- sliced red onion
- feta cheese
- kalamata olives
- homemade Tzatziki dressing
- Optional: Shredded chicken
- Place the chickbean crisps on a plate
- Layer with tomatoes, cucumbers, onion, olives, feta cheese.
- Drizzle Tzatziki dressing.
- Garnish with parsley
To make homemade Tzatziki sauce:
In a food processor or blender, blend together 1 cup greek yogurt, 1/2 cup peeled & diced cucumber, 1 garlic clove, 1-2 tbsp fresh dill, 1 tbsp extra virgin olive oil, salt and pepper to taste. Chill before serving.
And while these Greek nachos were meant as an adult snack, the Saffron Road product line up have become my daughter’s favorite snacks!
