Skinnytaste’s Insanely Good Oatmeal Muffins

Many years ago, after my husband and I had gotten married I needed to lose some weight. The first few years of marriage are similar to the Freshman 15. On my quest to lose weight, I found a wonderful new blog called Skinnytaste. This was when blogging was new and I loved how the site’s author created delicious looking recipes with bright pictures and nutritional information.
Fast forward nine years later and I am still a fan of Gina Homolka’s Skinnytaste. Gina launched her blog in 2008 and her love for beautiful photography and tasty food, have grown into a trusted resource for those who want healthy food without sacrificing amazing flavor.
I still enjoy using Skinnytaste recipes today. This past week I made a variation of Gina’s Insanely Good Blueberry Oatmeal Muffins. After getting the batter ready and opening up my fridge to find someone had eaten all of the blueberries I had bought, I substituted the blueberries for almond butter.
