Creamy Corn Chowder
The end of the summer is upon us sadly. For my family, the start of fall also means the end of the corn harvest at our favorite farm stand. This summer, it’s particularly bittersweet as the farm stand is closing after decades to make way for new condos. I bought as much as I could carry and I am getting ready to freeze some. In the meantime, this creamy corn chowder was the perfect way to enjoy the end of summer.
My kids love to shuck the corn for me. It’s an easy job for the kids to help with in the kitchen!
Creamy Corn Chowder

Creamy Corn Chowder
Ingredients
- 8 ears of corn
- 3 tbsp butter
- 1 package of bacon diced up
- 1 yellow onion medium, chopped
- 1/4 cup all-purpose flour
- 5 cups of water or vegetable stock
- 1/2 lb quartered yellow potatoes
- 1/2 tsp dried thyme
- salt and pepper
- 1 cup whole milk
- 1 tbsp honey
Instructions
- Cook corn in a large pot, when finished cooking, reserve corn stock
- When corn has cooled to handle, kernel the corn.
- Melt butter in a large pot.
- Add bacon and onion.
- Cook until the onion is translucent, about 10 minutes
- Sprinkle in flour, mix
- Add reserved stock or water
- Bring to a boil.
- Add in corn kernels and potatoes.
- Add thyme, salt and pepper.
- Reduce to low and simmer for 20 minutes.
- Add about 2.5 cups of the chowder to a blender and puree.
- Add back into the pot and stir in milk and honey.

Wow, this sounds interesting. I never knew or attempted to make any kind of chowder before, I might try this in an allergy friendly way with coconut milk. 🙂
