Quick and Easy Fudge Recipe
I learned last summer on our trip to Ocean City, NJ that my son had a small (or large) obsession with Fudge. Strangely enough, I had never even had fudge until then either! I remember we walked up and down the boardwalk sampling fudge from every single chocolate shop! This summer, his eyes lit up when he saw that the boardwalk by our house – Jenkinson’s – also sells fudge. So, needless to say, I knew pretty quickly what we’d be making for Mini Chef Mondays very soon.
I was really happy to make this with him because during the school year he often misses out on helping me with Mini Chef Mondays! Fudge is one of those things that ANYONE can make. If you have never, ever made any type of candy, baked good, etc. this is for you! Promise! There are only 3 ingredients too!
In a microwave safe bowl, mix together 2 cups (1 package) of milk chocolate chocolate chips and 1 14 oz. can of sweetened condensed milk. Microwave for 1 minute. Remove from the microwave and let stand for 1 minute. Stir.
If you find that the chocolate chips did not melt all the way, microwave for an additional 30 seconds to melt completely.
Stir in 1 teaspoon of vanilla extract when the chocolate and milk is completely mixed together.
Pour the fudge into a prepared 8×8 pan. I found lining it with parchment paper helped the fudge come up easier.
Stick the fudge in the refrigerator to cool or let it sit out on the counter before cutting into it. Store in an airtight container.
