Baked Peach & Pecan Oatmeal

One of my goals recently was to start eating better. And for me, that means actually eating. I often found myself going hours or sometimes all day without taking care of myself. Between being a mom of two busy kids and a work-at-home-mom, the days go by fast! I am finding ways to make taking care of myself easier and one of which is quick on-the-go foods that are packed with nutrition and quality ingredients.
I met McCann’s Irish Oatmeal® at the Summer Fancy Food Show this past June as part of the Mom Blog Tour. I never tried their oatmeal before and the new Microwavable cups were perfect for me to have as a quick breakfast, an afternoon snack or even as a late night snack when I am up editing photos while the rest of my house is sleeping.
What I really enjoyed about McCann’s Irish Oatmeal® was the fact that for the last 150 years their 100% whole grain Irish oats have been sourced from hand-selected, small farmers that allow for their oats to consistently be high-quality. The rich and nutty taste is unique because there has been no further processing.
It is so comforting to also know that McCann’s Irish Oatmeal® has earned its first Non-GMO Certification from the Non-GMO Project for three of its products — Steel Cut Irish Oatmeal in the 28oz. Tin, Quick & Easy Steel Cut Irish Oatmeal in the 24 oz. Canister, and Quick Cooking Rolled Oats in the 16 oz. Box.
With all that in mind, I thought a Baked Oatmeal would be a delicious breakfast for me to have ready to enjoy in the mornings for myself. We had just gone peach picking and I had some chopped pecans left over from another recipe, so I put them all together to make a Baked Peach & Pecan Oatmeal.
I used the McCann’s Steel Cut Irish Oatmeal for this recipe. On the Mom Blog Tour at the Summer Fancy Food Show, the McCann’s chef told us that the best oatmeal for an overnight slow-cooker oatmeal was steel cut, so I thought that would pertain to this as well.
In a bowl, mix together 2 cups of McCann’s Steel Cut Irish Oatmeal, 1/4 cup brown sugar, 1 tsp baking powder, 1/2 tsp salt, 1 tsp cinnamon and 1/2 cup chopped pecans.
In another bowl, mix together 2 cups milk, 1 egg, 1 tsp vanilla extract,and 3 tbsp butter (melted).
Prepare an 8×8 baking pan and on the bottom layer 1 1/2 cups chopped peaches. Pour oatmeal mixture on top. Pour milk mixture on top of the oats.
Bake at 350 degrees for 35-40 minutes. Let rest for 5 minutes before serving. To reheat, mix a little bit of milk with the baked oatmeal and microwave.

- 2 cups McCann's Steel Cut Irish Oatmeal
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chopped pecans
- 2 cups milk
- 1 egg
- 1 tsp vanilla extract
- 3 tbsp butter
- 1 1/2 cup chopped peaches plus extra for garnish (about 4)
- In a bowl, mix together 2 cups of McCann's Steel Cut Irish Oatmeal, 1/4 cup brown sugar, 1 tsp baking powder, 1/2 tsp salt, 1 tsp cinnamon and 1/2 cup chopped pecans.
- In another bowl, mix together 2 cups milk, 1 egg, 1 tsp vanilla extract,and 3 tbsp butter (melted).
