Sweet Potato Crusted Quiche
I love creating a delicious breakfast for my family. On weekends though, it seems we always wake up late and we can never figure out if we should have breakfast, lunch or brunch LOL. So, it’s fun to try to create new recipes that can appeal to all 3 of those!
One thing we have always dreamed of is owning a chicken farm for the farm fresh eggs. Living in a condo, that is just impossible. Have you been hearing those funny chicken commercials on the radio lately? I have too! That is why I was so excited to get to try Nellie’s Certified Humane Free Range Eggs!
What’s nice about Nellie’s eggs is that since we can’t have our own family farm, Nellie’s supports a network of small family farms, unlike their competitors who have massive factory-farm set ups. Nellie’s hens have happy lives, which means a better egg for your family! The hens at Nellie’s are never caged and can enjoy the great outdoors as much they want! The girls at Nellie’s are fed nutritious, high-quality feed which is free of antibiotics and hormones. Plus, they are first certified humane farm in the entire country!
After enjoying some Nellie’s eggs, let me tell you, you can taste the difference! Whether you like your eggs sunny side up, scrambled or deviled like my daughter, you will want to take a taste for yourself!
To help our breakfast, lunch, brunch problem, I made this delicious Sweet Potato Crusted Quiche with Nellie’s eggs and hit the spot!
Start by peeling and thinly slicing your sweet potatoes. Layer them around a casserole dish or my favorite, a cast iron skillet.
Whisk 4 eggs with 3/4 cup of milk and then add salt and pepper. You can then add in any additions that you like. I added thinly sliced ham and 1 cup of shredded sharp cheddar. But, you can get creative with all sorts of vegetables, meats and cheeses for your own quiche!
Pour your mixture on top of the sweet potato crust and cook for 25-30 minutes at 350 degrees.

Sweet Potato Crusted Quiche
Ingredients
- 2 medium sweet potatoes
- 4 eggs
- 3/4 cup milk
- salt & pepper
Instructions
- Peel and thinly slice sweet potatoes.
- Layer around a prepared casserole dish or cast iron pan.
- Crack and whisk eggs, add milk, salt and pepper.
- Add additions like vegetables, cheese and meats.
- Bake at 350 degrees for 25-30 minutes.
- Let cool before serving.
