Peppadew Pineapple Rice
We recently returned home from one the best vacations of our lives, a cruise to Florida and the Bahamas. One night on the buffet was this delicious rice made with cucumbers, tomatoes and pineapple. Both my husband and I looked at each other and thought the same thing – this would be delicious with Fresh Peppadew® Goldew™ we have been enjoying at home.
After the Fresh Peppadew® Goldew™ arrived at our door, my husband immediately connected the jar with the Jersey Fresh billboard he sees on his way to work on the New Jersey Turnpike. I absolutely love that this is a Jersey Fresh product grown here in New Jersey on local farms.
These beautiful Goldews are gluten free with no additives or colourings. They’re all-natural and non-GMO, making them an ingredient that adds fresh flavor to any type of dish.
When we came home and found pineapple on sale, we knew this recipe was meant to be! What makes this dish special is the punch of flavor that the brine that the Fresh Peppadew® Goldew™ peppers marinate in. Adding it to the rice gives a sweet flavor that makes this Peppadew Pineapple Rice the perfect side dish to your summertime meals.

Peppadew Pineapple Rice
Ingredients
- 1 cup dry Jasmine Rice
- 2 cups water
- 1 tbsp water
- 1 tsp salt
- 1/2 diced cucumber
- 1 diced tomato
- 1/4 cup finely chopped pineapple
- 4 Fresh Peppadew® Goldew™ diced
- 1 tbsp Goldew marinade
Instructions
- To make rice, add rice, water, oil and salt to a saucepan. Cover and bring to a boil.
- Lower to medium-low and leave the lid slightly ajar until the water evaporates.
- Stir one or two times while cooking.
- Let the rice sit 10-12 minutes in the saucepan.
- In a bowl, combine 1/2 cup of the rice, cucumber, tomato, pineapple, goldew peppers and goldew marinade.
- Mix.
- For a fun presentation, serve in a hollowed out pineapple.
