Peanut Butter & Jelly Muffins
|Stir together 2 cups of all-purpose flour,
1 1/2 tsp salt and
1 tbsp baking powder in a large bowl.
|Add 1 cup milk,
2 large eggs,
2/3 cups sugar,
1 cup natural creamy peanut butter (stirred) and
1/3 cup vegetable oil to the bowl.
|Combine until mix is well moistened.|
|Fill muffin pan evenly with half of the batter.
Stir 1/2 cup of grape jelly in a separate bowl.
Place 2 tsp of jelly in the center of each muffin and top with remaining batter.
Sprinkle with 1 tsp of sugar on top of each muffin.
Bake for 18-20 minutes.
Remove and cool in the pan for a minimum of 5 minutes.
Serve with a glass of icy, milk of course!
